Temperature is an important condition for the growth and reproduction of microorganisms. The suitable growth temperature for different microorganisms varies. If the temperature exceeds the suitable range for growth, it will stop growing or die. The function of enzymes is also closely related to temperature.
At around 37 ℃, it has strong decomposition ability and fast chemical reaction rate. As the temperature increases, the enzyme's ability to decompose increases, and when the temperature exceeds a certain range, the enzyme begins to be destroyed. Therefore, lowering the temperature can cause microorganisms to stop reproducing or even die, weaken or lose the ability of enzymes to decompose, and prolong the freshness of aquatic products.
